Pad See Ew with Steak & Collards
You guys know I’ve been on a huge Asian food kick lately. Thai and Asian inspired dishes are one of my favorite cuisines. In college I worked a sushi restaurant where I learned how to make many traditional Asian dishes and I also took a cooking class in Thailand where I learned the basics on how to make a lot of Thai inspired dishes as well. Some of the best food I have EVER had in my life was on our trip to Thailand.
One of my favorite Thai noodles dishes to order when we go out for Thai food (other than curry) is Pad See Ew. Pad see ew is a Thai dish of stir-fried wide rice noodles with vegetables, protein, and a sweet and salty soy sauce. The name translates to "soy sauce stir-fried noodles".
It’s a salty and sweet savory noodle dish that’s high in protein and flavor! It comes together very quickly in about 30 minutes because its a quick stir fry.
Because Pad See Ew is made with rice noodles, just like Pad Thai, it is naturally gluten free as well.
I’ve been making mine with grassfed steak and collard greens from the garden but traditionally, Pad See Ew is made with Chinese broccoli and any protein of choice. If you don’t have access to collard greens or Chinese broccoli, any dark leafy green will do: Kale spinach or cabbage would also work well.
Here’s how I make it:
Ingredients:
1 (1 -1.5 lb) grass-fed steak (I used a Ribeye cut) sliced thin
3 eggs
1 pack of thick rice noodles (the ones I used here aren’t as thick as I like but these rice noodles here are thicker and the correct size for Pad See Ew)
1 + 1/2 cup chopped collard greens
3 garlic cloves (minced)
For the Sauce:
4 tsp brown sugar
4 tsp white vinegar
6 tbsp soy sauce or alternatively soy free coconut aminos
4 tbsp oyster sauce
Extra virgin olive oil
salt and pepper to taste
Instructions:
Start by boiling a pot of water for your rice noodles.
Next, chop your steak into thin slices, about 1/2 inch thick. Sprinkle the steak with a few pinches of salt and pepper.
Heat a wok or a large pot over medium heat and add extra virgin olive oil.
When the oil is hot, add your minced garlic and cook for a minute or two.
Once the garlic has flavored the oil a bit, add your steak and cook it together for only 2 minutes.
Next add your chopped collard greens or greens of choice to the stir fry.
Once the steak and collards are cooked, push them to the side of the pan and scramble the eggs right in the pan. Once the eggs are scrambled, you can mix the egg into the stir fry. Then remove the entire stir fry from the pan onto a bowl or plate and set it aside.
In a small bowl, mix together your sauce ingredients and whisk them together well.
Cook your noodles for about 7 minutes or until soft then strain them.
Transfer the noodles to the wok and add 3/4 of the sauce to the noodles. Mix it into the noodles well.
Then add your stir fry mix back into the wok/pan with the noodles and sauce and combine everything together well. You can then add the remainder of the sauce.
Your Pad See Ew is ready to serve!
