Omega + Veggie Loaded Salmon-fish Salad (GF, DF, Kid-friendly)

It’s about time this silly but delicious and nutritious little dish was added to my blog. About dang time! I legitimately make this Omega + Veggie Loaded “Salmon” Fish salad every dang week. It is loaded with so much nutritious goodness and it is ready in minutes.

Its one of the few things I meal prep for the week to keep in the refrigerator for quick and easy lunches.

You probably already know by now but I consider sardines a nutrient dense superfood for kids (and adults) and I’ve found lots of creative ways to get them into our diet. This was the first way I was able to get them into my kiddos diet in a way they genuinely loved!

It’s made with wild canned salmon and wild sardines and all the veggies in the fridge. It can be added to sandwhiches or used as a dip for veggies or crackers. I’ve also used it to make a bombbbbbb “tuna” melt too and the kids love it.

Here’s how to make it.

INGREDIENTS:

  • 2 cans wild alaskan salmon (I buy this brand)

  • 2 cans wild sardines (I buy this brand)

  • 1/3 yellow onion (diced)

  • 2 stalks celery (diced)

  • 1-2 carrots (shredded)

  • 1/3 red pepper (diced)

  • avocado mayonaise (this is the brand I buy)

  • 2 pickles (diced) + 1/3 cup pickle juice

  • 2 tsp dill

  • 2 tsp dijon mustard

  • salt and pepper

INSTRUCTIONS:

  1. Drain your canned fish and squeeze out the oil. Add to a large mixing bowl.

  2. Dice all your veggies finely and add them to the bowl

  3. Add your avocado mayo, mustard, pickle juice, dill and salt and pepper.

  4. Mash and mix all the ingredients together with the back of a fork and serve!
