Mango-Butternut Squash-Ginger Smoothie (Kid-Friendly, Dairy Free)

It’s been a while since I made a smoothie I L O V E D so much that I thought I needed to write down the recipe for it. This Mango-Butternut Squash and Ginger smoothie is super-kid friendly (not spicy at all) and makes the most delicious veggie-loaded breakfast drink.

Living in Miami, we make a lot of mango smoothies around here (especially come mango season). But it didn’t occur to me until recently, I could easily throw in a bunch of frozen butternut squash cubes into our regular mango smoothie and make it taste delicious!

Its sweet and tangy and absolutely refreshing - I promise your kiddos will love it!

Here’s how you make it.

INGREDIENTS:

  • 1 banana

  • 1/2 - 1 inch cube of ginger (peeled)

  • 1 cup frozen butternut squash

  • 2 cups frozen mango

  • 1 cup canned coconut milk

  • 1 + 1/2 cup orange juice

DIRECTIONS:

Place all the ingredients in a high powered blender (make sure you have enough liquid to just cover the top) and blend until smoothie.
