Blueberry & Buckwheat Waffles (Gluten-free, Kid-friendly)

I have grown quite fond of buckwheat flour around here lately. I’ve used it to make lots of yummy gluten free creations and its very easy to work with and honestly I don’t notice much of a difference in taste from regular wheat flour.

Buckwheat is nutrient-packed, gluten-free seed that has been abundantly consumed in Asian countries for centuries. When it’s ground up finely, its turned into a flour that can replace regular or wheat flour. It’s got a nice nutty and hoppy flavor to it and pairs nicely with berries and other tart flavors.

Buckwheat flour is high in protein (5.7 g per 1 cup), healthy fiber and many important minerals. This makes it a great gluten free flour replacement in my book.

I’ve also been learning alot about incorporating fermented foods into our recipes since beginning my gut healing journey a few years ago. I was inspired to make this waffle recipe (which incorporates my homemade kefir) by a recipe I saw in Sally Fallons Nourishing Traditions cookbook. If you’re looking for some nourshing recipes for your littles, this is a great book to check out. It not only has great recipes, but its also a wealth of holistic health and gut healing information too.

Anyhow, I should eventually share how we make our homemade kefir at some point on the blog but that’s a task for another day. Today, I’ll just share with you breifly some of the benefits of kefir below.

KEFIR BENEFITS:

  • benefits the ecosystem of the gut - essentially it is a powerhouse of probiotics

  • supports a healthy immune system

  • bone building properties

  • supports detoxification

  • helps with IBS and IBD

  • has properties known to protect against asthma and allergies

We absolutely love kefir for many reasons, but mostly for benefiting our gut health and supporting our immune systems. We have been making it for YEARS. If you haven’t quite mastered the art of making your own Kefir at home, that’s totally fine! I used to be completely intimidated by the idea of it until I learned how easy it actually was.

Here’s a great brand of storebough kefir that uses organic grass fed milk to check out in the meantime.

So while I promise to deliver my homemade kefir recipe soon, here is how to make these delicious gut-friendly, protein packed Blueberry and Buckwheat Waffles that the kids absolutely adored.

Side note: You can freeze any extra waffles and re-heat them when youre ready and they also make great snacks to pack in lunchboxes. I serve them in lunchboxes with a little side of maple syrup to dip.

Time: 20 minutes
Serves: Makes about 6-7 large waffles

Blueberry & Buckwheat Waffles (Gluten-free, Kid-friendly)

INGREDIENTS:

  • 2 cups organic buckwheat flour (we used this brand)

  • 1 cup kefir (we use homemade kefir but you can use storebought too)

  • 2 large eggs, lightly beaten

  • 2 tbsp avocado oil

  • 1 cup nut milk

  • 3-4 tbsp maple syrup

  • pinch of sea salt

  • extra water to thin batter (if needed)

  • 1 cup frozen wild blueberries

INSTRUCTIONS:

  1. Turn on waffle iron and when it is fully heated, spray with avocado oil (or coconut oi).

  2. Add kefir directly into the buckwheat flour. (If you have time, you can soak the flour in the kefir for up to 24 hours to ferment even more). However, if youre in a hurry, you can mix them right in together.

  3. Add in the eggs, oil, nut milk, salt and syrup to the mixture and whisk together.

  4. Mix all the ingredients together until you get a nice, semi-thick, waffle batter. Add 1/2 of the blueberries right into the batter. If youre batter is a little too thick, add a little bit of water until you reach the desired consistency.

  5. Pour about 1/2 cup of batter into each waffle iron square and wait about 7-9 minutes or until the waffle is slightly browned and crisp on the outside.

  6. Add the remaining blueberries and your favorite toppings! We enjoyed ours with some grass-fed butter and maple syrup.
